Takibi Reopening

After a temporary closure earlier this year, we’re excited to welcome our community back to our restaurant Takibi, located at our North American Headquarters on Portland’s Northwest 23rd Avenue. 

During our time away, we took the opportunity to reconceptualize Takibi’s offerings and identity. The restaurant has maintained its focus on seasonality and fire-centric dishes, featuring large plates from the hearth. New additions include quintessential Japanese cuisine like sushi, sashimi, tempura, specialty ramen, a five and seven-course omakase, and more.  

The restaurant brought back its lunch program with a new menu featuring ramen, sushi, and nigiri sets. We’re especially proud of the menu’s award-winning ramen from ramen specialist Yoshimitsu Seki. Mr. Seki hails from Niigata prefecture, the birthplace of Snow Peak and one of the snowiest regions in Japan, famous for its rich ramen culture.

The ramen at Takibi is crafted with imported noodles made from flour using the traditional Japanese “Yukimuro” snow-aging method, where natural snow is used as a refrigerator to enhance the sweetness and flavor of the wheat. This ancient technique from Niigata allows for ingredients to be aged naturally in a cold, high-humidity environment, bringing out their best qualities.  

Takibi’s beverage program continues to offer innovative craft cocktails, local wine and beer, and a new expanded sake list, primarily sourced from Niigata.
