When it comes to camping recipes, simple often reigns supreme. This five-ingredient dish combines earthy mushroom flavor with the oniony taste of leeks. Combine the ingredients in your trusty Cast Iron Oven, set it over a bed of hot coals, and you’ll have a delicious side for your chicken, steak or other hearty vegetables.

- Mushrooms ( what kind & how many)
- Salt to taste
- Pepper to taste
- ½ cup of olive oil
Method:
Prepare briquettes in the Takibi Fire & Grill, or alternatively, let several logs burn down to create a bed of coals. Wait until the briquettes are a white gray color or until the wood coals glow orange. Chop leeks and mushrooms into bite-sized chunks. Add them to the Cast Iron Oven 26cm or another Dutch oven. Add the olive oil to the pot, covering the leeks and mushrooms evenly. Add salt, pepper and several generous squeezes of lemon juice. Toss gently. Place the Cast Iron Oven directly into the bed of briquettes and use the Fire Tool Set to place a few on the lid. Allow to cook for about 15 minutes, removing the lid to stir occasionally halfway through. Please note that cook times may very depending on the heat of the grill and the size of your mushrooms. Once the mushrooms are tender, remove the pot from the coals using the Cast Iron Lifter. Serve the leeks and mushrooms with your preferred choice of protein or enjoy them over rice.
