A fall classic that should not be overlooked, this Spiced Apple Cider recipe from Bon Appetit can be enjoyed by kids and adults alike. The seasonal spices will have your kitchen smelling cozy. Ingredients:
1-gallon apple cider, preferably fresh (the darker the better)
1 tablespoon whole allspice
1 teaspoon freshly grated nutmeg
4 cloves whole cloves
3 cinnamon sticks
1 vanilla bean, split lengthwise
Brandy, Calvados (apple brandy), or bourbon (optional)
Instructions:
1. Mix the cider, allspice, nutmeg, cloves, and cinnamon sticks together in the Staub Cocotte or other large pot. Remove the seeds from the vanilla bean and add them to the mixture, then add the bean. Bring spiced cider to a simmer over medium heat, then reduce the heat to medium-low and cook just below a simmer until flavors meld, for about 1 hour.
2. Then use a sieve to strain the solids out of the pot. Add brandy to taste if preferred, then ladle the spiced cider into a titanium mug and enjoy!
